Magnetic Resonance in Food Science

The course is focused on cutting-edge Magnetic Resonance methodologies applied to food research. This year the Summer School will be held from 1st July to 4th July 2014. 
Frontal lessons and integrated hands-on activities will guide the candidate through practical and theoretical knowledge on both NMR spectroscopy and Magnetic Resonance Imaging techniques.
Theoretical lessons will focus on the description of instruments hardware and software and their uses, data analysis tools, and on their application in food science and technology through the analysis of case-studies.
In laboratory, supported by Porto Conte Ricerche staff, students will learn NMR/MRI data acquisition from food matrices. Obtained data will be then examined according to a specific experimental design. Students will be encouraged to suggest samples, which are already part of their research.
Ideal candidates are young researchers, preferably post graduate students, PhD students and post-doctoral fellows.

    Molecular Imaging and NMR LabThe Lab is highly specialized and instruments are applied to analyze liquid and semi-liquid samples (Bruker Avance 600 MHz equipped with Bruker probes QXI, BBO e HRMAS) and micro-imaging studies (MRI, Bruker Avance 300MHz). Analysis and services are provided for structural and functional studies on purified biological molecules and macro-molecules, both on in vitro and in vivo investigation (Bruker Avance 300MHz, probe 2.5 Micro for protonic signal acquisition, water-cooled gradient system XYZ and gradient strength 2.5 G/cm/A). A wide array of application are performed, including food science, environmental, and biomedical sectors. The lab also supports several projects for enterprise clusters aiming at developing molecular traceability systems for agri-food products and new diagnostic systems for human and animal health application.

  • Programme
    This course is aimed at those with little experience in MRI and NMR Imaging who aim at a comprehensive overview of the typical imaging analysis workflows, including practical approaches and data analysis. Individuals who may primarily benefit from this course include: PhD students and post-doctoral fellows, imaging core users, other researchers who are considering incorporating imaging protocols into their own research. Fluency in English is a requirement for application.
